The renovations and property enhancements keep coming for Hard Rock Hotel & Casino Biloxi. Continuing the trend of creating new and exciting food and beverage offerings for guests, renovations have been underway at Hard Rock Hotel & Casino Biloxi’s Satisfaction Buffet since April 4. On Friday, May 17, it will be re-introduced as the brand-new Satisfaction Buffet & Bar, featuring a fresh, comfortable, open-concept with a Gulf Coast industrial-style décor and beautiful views of Deer Island and the Mississippi Sound.  The new Satisfaction Buffet & Bar will offer an extensive new menu of mouthwatering house-made signature dishes and a fully-stocked beverage bar. 


Diners at the all-new Satisfaction Buffet & Bar will be treated to an extensive line-up of regional cuisine ranging from traditional comfort foods to exquisite culinary delights prepared fresh at multiple live-action stations, including garden-fresh salads, delicious freshly made pasta, paninis and gyros, freshly-baked bread and an authentic Asian station with a live chopping block. These live-action stations will allow guests to build a never-ending plate unique to their own tastes and desires.  And of course, no meal is complete without an assortment of delectable desserts from the all-new “desserts island,” which will offer a variety of decadent dessert options, such as bananas foster, cherries jubilee, fresh-baked cookies with shots of milk, deluxe ice cream and much more. 


As a complement to the delicious and bountiful food selections, guests will also be able to enjoy their favorite libations from the bar. In addition to a discounted everyday beer, wine, daiquiri and cocktail menu, the Satisfaction Buffet & Bar beverage program will include specialty days with select complimentary alcoholic beverages, such as Mimosas and Bloody Mary’s at brunch, draft beer at dinner or on weekends and more.


Leading the design and execution of the new Satisfaction Buffet & Bar is Hard Rock Hotel & Casino’s new Executive Chef Kevin Truong. Truong is a Biloxi native, who has a relentless passion for cooking.  He believes his diverse upbringing had a strong influence on his cooking style. Truong has a penchant for fusing different flavors together in unique ways so guests can have a memorable and flavorful experience. He is excited to showcase his unique fusion of flavors and recipes made from scratch at the Satisfaction Buffet & Bar.


“My father is Vietnamese, my mother is German and Irish and my step-father is African American, and I believe their influence gave me a diverse cooking style that has helped me thrive throughout my career,” said Truong. 


Mike Barlow, senior vice president of operations for Twin River Worldwide Holdings, the ownership group for Hard Rock Hotel & Casino Biloxi, understands the importance of a great buffet for casinos. 


“Our buffet at Hard Rock Biloxi has always been very good,” said Barlow.  “But we have decided to take it to the next level with an enhanced menu and product, updated décor and waterfront views and adding beverage services to the venue, which we knew was something our guests wanted. I am very proud of the new buffet and look forward to our guests enjoying it as well.”


The Satisfaction Buffet & Bar is located just off the gaming floor, next to the Hard Rock Hotel & Casino Biloxi’s new Sugar Factory American Brasserie. Satisfaction Buffet & Bar will officially be open to the public on Friday, May 17.
